For a few years now I have kept an eye on a weekly blogging event called What I Ate Wednesday (or the easier to write WIAW), run by Peas and Crayons. Basically What I Ate Wednesday is a collection of pictures and descriptions of what I ate in a day, shared on Wednesday. Although the blogging club side of it doesn't seem to still be running, it was something I really enjoyed, so I thought that I would unofficially continue this on my own.
So why would I want to do this? I think deep down most of us are a bit curious about what other people eat, and personally, I love this blog chain for the inspiration it gives me. I also think it gives good insight into the author behind the blog. What I Ate Wednesday is intended to be a judgement-free zone, and therefore a truthful view of what someone eats in a day, not just what looks good on a screen.
With my What I Ate Wednesday posts, I hope that you can gain some inspiration and ideas for meals and snacks, but also that you can see that I am not perfect in my eating and that I do allow myself some treats, however, overall, i would consider myself to be a healthy, well-balanced person.
So let's get into this.
Most mornings I wake up around 6am. I usually only have about half an hour in the morning between waking up and leaving for work, and being a bit of a girly girl, I like to spend this time doing my hair and make up and then assembling everything for mine and Jake's lunches. That's why I usually try and have healthy breakfasts that are grab and go and which I can eat when I get to work. This morning's breakfast definitely fit the bill as I could make it in a jar, leave it in the fridge and then just take the whole jar with me. My breakfast was coconut frappuccino oats. Once i have perfected the recipe I will post it on the blog as it was a great summer breakfast.
Come 12.30 I was starving again, so I went for lunch. Lunch was a salad that I had prepared the night before. If you follow me on Instagram or Facebook you might notice that this is the same salad that I had yesterday, but it was so good that I decided to repeat. This salad included some Basil chicken, Avocado, Nectarine and Lettuce with a Balsamic Dressing. I have been playing around recently with fruit in salads to add a bit of variety and nectarines definitely go well with things like avocado and feta. On the side of my salad I also had some refined sugar free chocolate oat slice.
Throughout the day I also drunk about 2L of water and had about 3 cups of tea (can you tell that I have a thing for hot drinks?)
