What I Ate Wednesday- Edition 1

For a few years now I have kept an eye on a weekly blogging event called What I Ate Wednesday (or the easier to write WIAW), run by Peas and Crayons. Basically What I Ate Wednesday is a collection of pictures and descriptions of what I ate in a day, shared on Wednesday. Although the blogging club side of it doesn't seem to still be running, it was something I really enjoyed, so I thought that I would unofficially continue this on my own.

So why would I want to do this? I think deep down most of us are a bit curious about what other people eat, and personally, I love this blog chain for the inspiration it gives me. I also think it gives good insight into the author behind the blog. What I Ate Wednesday is intended to be a judgement-free zone, and therefore a truthful view of what someone eats in a day, not just what looks good on a screen.

With my What I Ate Wednesday posts, I hope that you can gain some inspiration and ideas for meals and snacks, but also that you can see that I am not perfect in my eating and that I do allow myself some treats, however, overall, i would consider myself to be a healthy, well-balanced person.

So let's get into this.

Most mornings I wake up around 6am. I usually only have about half an hour in the morning between waking up and leaving for work, and being a bit of a girly girl, I like to spend this time doing my hair and make up and then assembling everything for mine and Jake's lunches. That's why I usually try and have healthy breakfasts that are grab and go and which I can eat when I get to work. This morning's breakfast definitely fit the bill as I could make it in a jar, leave it in the fridge and then just take the whole jar with me. My breakfast was coconut frappuccino oats. Once i have perfected the recipe I will post it on the blog as it was a great summer breakfast.

Around 10am my whole team went down to the cafe below work and grabbed a coffee. I really love coffee, but don't want to become dependent on caffeine, so I got this one as a decaf. Once I got back to my desk I had some Peckish Brown Rice Thins and some raw snow peas.

Come 12.30 I was starving again, so I went for lunch. Lunch was a salad that I had prepared the night before. If you follow me on Instagram or Facebook you might notice that this is the same salad that I had yesterday, but it was so good that I decided to repeat. This salad included some Basil chicken, Avocado, Nectarine and Lettuce with a Balsamic Dressing. I have been playing around recently with fruit in salads to add a bit of variety and nectarines definitely go well with things like avocado and feta. On the side of my salad I also had some refined sugar free chocolate oat slice.

This afternoon/evening I had to get across the city for an appointment to discuss my wedding dress (so exciting!!). Because it was raining today traffic was horrendous!! It took me around 50 minutes to do what should have been a 15 minute drive, and then over an hour to get home. Because I didn't get home until after 6pm I got a bit peckish on the way home so had some blueberries.

By the time I got home I was too tired and grumpy to cook a proper dinner, so I quickly made some poached eggs to go on top of avocado toast. On the side I had a carrot and then for dessert I had half a banana rolled up in a tortilla with some peanut butter and shredded coconut.

Throughout the day I also drunk about 2L of water and had about 3 cups of tea (can you tell that I have a thing for hot drinks?)
