Junk Free June Friendly Recipe - Chocolate Lamington Bliss Balls

I am now over a week Junk Free! Although I would say that my diet is pretty good the majority of the time, I still went through a sugar withdrawal over the weekend, with a headache all day on Sunday. I also still struggle at times with wanting a piece of chocolate or something sweet. I think a lot of it is out of habit, and most of the time I can curb my cravings with peanut butter or cheese, but sometimes I really just need something sweet.

This is where these bliss balls come in. I have a jar of these sitting on my desk for my weaker moments. They have also been a huge hit with my workmates. The good news is that they actually do taste a lot like a lamington thanks to the coconut in them. Add that to sweet dates, creamy cashew nuts and some cocoa powder and they really are bliss, whether you can eat other sugars or not.

A bit of a note for these is that they do require a good food processor or blender. I also chop my dates up a bit before I start blending, as it helps the whole process move along faster. In my opinion a food processor is a great investment anyway, so these are just a good excuse to get one!

1 cup dates, chopped
1 cup raw cashews
1 cup dessicated coconut
2 Tbsp cocoa powder
Ground almonds or coconut to roll (Optional)

Place all ingredients in a food processor or blender. Process for 30 seconds at a time, scraping down the side of the bowl after each time. When everything has broken down and is starting to clump together you are ready (I like mine with small pieces of cashew in them, but you can process these for longer to break down further).

Squeeze the mixture firmly to clump it together, then shape it into a ball. You might have to do a bit of squeezing to get it to hold together. If you would like, you can roll them in either ground almonds or coconut (as in the picture).

Store in an airtight container - They will keep for ages!
